Asian Slaw with Sesame Dressing

Asian slaw is a vibrant and crunchy salad that blends fresh vegetables with a flavorful sesame dressing. Unlike traditional coleslaw, which relies on mayonnaise, this Asian-inspired version features a tangy, umami-rich dressing made with cold-pressed sesame oil, rice vinegar, soy sauce, and a hint of sweetness. The nutty aroma of sesame oil enhances the crispness of shredded cabbage, carrots, and bell peppers, making every bite refreshing and satisfying.

Ingredients

  • 2 cups shredded cabbage (green or purple)
  • 1 cup shredded carrots
  • ½ cup thinly sliced bell peppers (red, yellow, or both)
  • ¼ cup chopped green onions
  • 2 tbsp cold-pressed sesame oil
  • 1 tbsp soy sauce or tamari (for gluten-free)
  • 1 tbsp rice vinegar
  • 1 tsp honey or maple syrup
  • ½ tsp grated ginger
  • ½ tsp minced garlic
  • 1 tbsp toasted sesame seeds
  • ¼ cup chopped cilantro (optional)
  • ¼ cup crushed peanuts or almonds (optional)

Steps

  1. In a large mixing bowl, combine the shredded cabbage, carrots, bell peppers, and green onions.
  2.  In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, honey, grated ginger, and minced garlic until well combined.
  3.  Pour the dressing over the vegetables and toss well to coat evenly.
  4.  Sprinkle with toasted sesame seeds, chopped cilantro, and crushed nuts if using.
  5.  Enjoy right away, or let it sit in the fridge for 15–30 minutes for deeper flavors.
